This is a quite frequent question. Of course, one solution would be to change the locale - however in most cases this is a bit frustrating. So, here's how to change the first day of the week displayed in the Gnome Calendar:

First, have a look at which locale you are using:

locale
I am using en_US.

Now, as root, perform the following operations:

First, create a backup of your original localization file:

cp /usr/share/i18n/locales/en_US /usr/share/i18n/locales/en_US.original

Now edit this file: /usr/share/i18n/locales/en_US /usr/share/i18n/locales/en_US and make sure to set:

first_weekday 2

Save your file. Now update your locales:

locale-gen

And finally refresh your desktop:

killall gnome-panel

You're done. Now Monday should be the first day in your Gnome Calendar.
